abstract

the objective of this study was to investigate dehydration kinetics of barberry (berberis vulgaris l.) at different drying temperatures (60 ºc, 70 ºc, 80 ºc), air velocities (0.3 m s-1, 0.5 m s-1, 1 m s-1) with two types of pretreatment. drying time and colour quality during dehydration were experimentally determined. barberries were dried from the initial moisture content of 73.44% (w.b.) to the required moisture content of 18% (w.b.). dehydration kinetics was monitored by measuring barberries weights at regular intervals. convective drying curves were obtained for the treated and untreated barberries. the effect of two dipping pretreatments on drying kinetics of barberries was also studied. the two pretreatments were thermal shocking by immersing barberries in hot water, followed by cold water cooling, and dipping in olive oil and food grade k2co3. colour of the dried product was altered significantly during drying. the results indicated that the use of low temperatures is adequate for preserving this property. the air temperature significantly affected drying time and hunter colour indices of barberries (p< 0.05). with heat shocking and treatment with olive oil and k2co3, drying time was reduced to about 40% and 60%, respectively. the total colour change (δe) and hue angle (h) increased with temperature. moisture transfer from the test samples was described by applying the fick’s diffusion model for calculating the effective diffusivity. the effective moisture diffusivity (deff) of barberry increased as the drying air temperature increased. the deff values were higher for the treated samples than the untreated ones. these values were also higher for the samples treated with olive oil and k2 co3 emulsion than those treated with hot water. the effective diffusivity of the untreated and the pre-treated varied between 2.57×10-13 and 9.67×10-12 m2 s-1, respectively. higher colour change was observed in barberries treated with olive oil and k2co3 emulsion. statistical analysis showed that temperature and pretreatment had the most significant effect on drying time at p

modeling of drying kinetics of paddy (cv. fajer) using a thin-layer dryer

rice is one of the most widely human consumed agricultural products. for a prevention or diminishing of rice cracking in its milling process, precision control of drying conditions is indispensable. in this research, a thin layer experimental dryer is employed to obtain paddy’s drying kinetics. drying experiments were conducted at five inlet temperatures of drying air of 30, 40, 50, 60 and 70 °...

Modelling of thin layer drying kinetics of sour cherry in a solar dryer and under open sun

Drying kinetics of sour cheery is investigated in solar dryer with forced convection and under open Sun with natural convection. Drying data were fitted to different mathematical models, whose performance was investigated by comparing coefficient (R), reduced chi-square (Ç) and root mean square error (RMSE) between the observed and predicted moisture ratios. Among these models, drying model dev...

Drying of calcium carbonate in a batch spouted bed dryer: optimization and kinetics modeling

In the present work, the drying of calcium carbonate in a batch spouted bed dryer with inert particles has been investigated experimentally. The effect of several operating parameters including air temperature (90, 100, and 110 ˚C), air velocity (Ums, 1.2 Ums, and 1.5 Ums), and dry solid mass (5, 10, 20 g) has been studied. The Taguchi method has been applied to determine the optimal parameters...

energy and exergy analyses of thin layer drying of tomato in a forced solar dryer

in this paper the energy and exergy analyses in chamber drying process of thin layer drying of tomato in a forced solar drying was investigated. the experiments were carried out with two thicknesses of 5 and 7 and two airflows 0.5 m.s-1 and 1 m.s-1. during the experimental process, ambient temperature was between 22 and 36 , air relative humidity between was 14 and 50, and solar radiation range...

Mathematical Modelling of Thin Layer Drying Kinetics of Biodegradable Pellets

The deoiled rice bran, industrial waste (paddy husk, potato peels and banana peels) and plasticizers were added to develop pellets after extrusion for their further use in preparing molds (pots) for horticultural use. Pellets were prepared by extrusion technology using glycerol and cashew nut shell liquid as plasticizers and were dried in a chamber with constant air circulation (1.5 m/sec). Dry...

An Effective Passive Solar Dryer for Thin Layer Drying of Poultry Manure

Animal and poultry manures have been recognized for centuries as organic fertilizers providing essential nutrients to crops and improving soil structure due to their large input of organic matter. Increasing demand for poultry and egg products has led to intensification of the poultry rearing process, resulting in large amounts of poultry manure. Drying can be used to reduce the environmental i...
